Making meals in advance is made much easier with the help of this delicious cold lunch.
A simple recipe for chicken salad
This traditional chicken salad recipe calls for only a few straightforward ingredients, making it ideal for preparing in advance and packing as a lunch. You can spread it on a bagel, wrap it in lettuce, put it on top of a salad, or make a sandwich out of chicken salad.
This is my go-to lunch that I keep in the fridge to eat during the week or to bring to potlucks because it does not contain any dairy or gluten, it is high in protein, and it has a low amount of carbohydrates.
A few of my other favorite recipes for healthy chicken salad include Cilantro Chicken Salad, Ranch Chicken Salad, and Chicken Salad with Lemon and Dill. It’s possible that the traditional egg salad I make is also healthy for you.
Things you need to make a classic chicken salad
- Crumble up twelve ounces of chicken breasts that have been cooked and come from a whole chicken that has been roasted. Utilising rotisserie chicken is yet another way to cut down on preparation time.
- If you want to reduce the number of calories you consume, you can use the mayonnaise of your choice rather than light mayonnaise.
- Cucumber: If you want a crunch and some vegetables, cut up some cucumber.
- Use chives or scallions in place of red onion in situations where they are more appropriate.
- Broth for Chicken If the chicken salad seems to be lacking in moisture, add two tablespoons of chicken broth to the mix.
- Add some mustard made with Dijon for some additional tang.
- The seasoning consists of salt and pepper that has been mixed.
Chicken Salad Recipe
A whole roasted chicken can be used to make chicken salad, which is a dish that only requires a few ingredients and takes very little time to prepare. You could also make this salad with the chicken breast recipe I have for the air fryer, or you could poach the chicken in chicken broth (see the recipe below for details).
Remove the chicken breast from the roasted chicken and finely chop it along with the vegetables in a food processor. Mix the mayonnaise, celery, onions, and Dijon mustard together in a bowl. Add the chopped chicken and season with salt and pepper to taste.
How to Cook Chicken Breast in Chicken Stock:
If you follow these simple steps, you will be able to poach a chicken breast successfully:
- Take a chicken breast and cover it with chicken broth in a small pot. If the liquid doesn’t reach the top of the chicken, you may need to add some water.
- To prepare the chicken, combine it with salt, pepper, a piece of celery and its leaves, onion, and any other herbs or spices that you prefer. Bring the mixture to a boil. Allow it to simmer for five minutes over a low heat.
- Once it has been removed from the heat, make sure it is well-covered and set aside for 15–20 minutes, or until the temperature in the thickest part of the breast reaches 160 degrees.
- There will be no more unfinished business in the chicken. After it has cooled down, cut it up carefully piece by piece.
After making chicken salad, how long does it last?
The shelf life of homemade chicken salad is approximately the same length of time when it is stored in an airtight container in the refrigerator for approximately 4 days.
